For that we require 1 cucumber peeled and cut off the ends. 2 tsp roasted peanut powder, 2 tsp shredded fresh coconut, finely chopped corinader leaves, salt to taste, We will need sugar too. 1/2 tsp cumin seeds, 1 finely chopped green chili, lemon juice and ghee for tadka. To begin with let’s cut the cucumber. How to do that? I have taken “Vili.” You can use knife instead of “vili.” But I am using vili purposely. As it’s use has almost stopped at some places according to changing time. So I am using vili today. How to cut kakdi? Peel the cucumber and cut off its both ends. And cut it with vili like so. You can do same process with knife. After cutting it vertically from all sides cut it horizontally. Like so. Repeat the step. If you are not comfortable with this process Then you can cut it into fine pieces with knife. I have taken the cut cucumber into a bowl. Add shredded fresh coconut, roasted peanut powder, lot of finely chopped coriander leaves, salt to taste, Suagr and lemon juice. Nice and fresh ingredients are added in this recipe. May be that’s why it is known as khamang kakdi. I have mixed cucumber well with all these ingredients. Let’s add ghee tadka in this. I have heated up 1 tsp ghee. Add 1/2 tsp cumin seeds. When it splutters then add green chili. I don’t add green chili in cucumber mixture but in tadka. The reason begind it is when green chili cookes a little it is not much troublesome. It becomes a little lighter on stomach. Let’s add this tadka on khamang kakdi. Khamang kakdi is already. You can have khamang kakdi as salad. It tastes nice. You can serve this as side dish. It gets fantastic flavors, tangy, sweet, crunch of peanuts, fresh coconut. Tastes just awesome. Do try this at home. Make this khamang kakdi by cutting kakadi with vili only.
