Hello, I am Madhura and welcome to Madhurasrecipe Marathi. Today let’s see how to prepare pav bhaji. Pav bhaji is Maharashtrian probably Indian popular street food. When we eat pav bhaji on a street stall, it is prepared on a open pan. But today let me show you the recipe that I prepare at my home. First of all let’s cook the veggies. I have taken 7 small potato in a pot. These are really small potatoes. You can use 1 big or 2 medium size potatoes. I am adding other veggies in another pot. First of all finely chopped capsicum. You can take veggies of your choice. Then cauliflower. I have taken 1 cup capsicum and 1 cup cauliflower. Now green peas. I am using frozen peas here. 1/4 cup grated carrot. You can avoide carrot. But today I had carrot with me. So I am adding it. You can add a little beet root to these veggies if you want. So the pav bhaji gets nice reddish colour. I am adding a little water to potatoes and add about 1/2 glass water to veggies. We are going cook these veggies in cooker. In cooker I have added 1″ water. I have kept the dish that comes with cooker at the bottom. So that water at the bottom won’t enter in the pots above. Let’s put the potato pot at the bottom. So that the potatoes cook evenly and quickly. And on that the veggies pot. Close the lid. Cook on medium heat until 2-3 whistles. Until the veggies are getting cooked let’s cook masala for pav bhaji. Here I have heated 1 tbsp oil in a pan. To it add 1 big bowl finely chopped onion. Here I have used 2 big onions. To make pav bhaji masala we have to use more onion. Let’s fry the onion until it gets pink colour for about 7-8 minutes. I have fried the onion on medium heat for about 7-8 minutes. It has got nice reddish colour. Let’s add tomato to it. I have taken 2 small tometoes. You can take 1 big tomato. Add 1 tbsp ginger garlic paste. I am going to add all masale right now. Add 1 tbsp pav bhaji masala and 1 tbsp kashmiri chilli powder. I am not using regular red chilli powder. I am using kashmiri red chilli powder. It gives nice colour to bhaji. Let’s mix everything well together. In this masala add 1/2 stick or 2 tbsp butter. Fry masala until tomato cooks well. Here tomato has mixed well with onion. It has got nice colour. Add 1/2 tsp sugar. Sourness or acidity in tomato is reduced due to sugar. Here I have cooked the vegetables well. I have peeled the boiled potatoes. Let’s mash the boiled veggies. Mash well with potato masher. Do not remove the water in boiled veggies. Let it be like that. Here I have mashed the veggies well. Now grate the boiled potatoes in mashed veggies. You can mash the potatoes and veggies together if you want. But due to it small chunks of potatoes may left behind. To avoide it I try to grate the potato. I have grated all the potatoes. Let’s mix the veggies and potatoes well. Let’s add the boiled and mashed veggies to the masala that we have prepared. Add salt to taste. Let’s mix everything well together. You can see. It has got nice red colour. Again add 1 tbsp butter to it. Cover and cook on medium heat for about 7-8 minutes. So that flavour in masala of tomato and onion will be absored well in veggies. Here I have cooked the pav bhaji on medium heat for about 10 minutes. It smells just awesome. Let’s remove the lid and check. Wow.. It has got nice colour. And it is not too dark red. It doesn’t look like artificial colour. It has got nice tarri of butter. Nice.. Pav bhaji is served with buttered and roasted ladi pav or pav bhaji che pav.
