Achari Paratha | Pickle Paratha Recipe | Punjabi Style Paratha


today we making achari paratha or pickle paratha using mango pickle masala ingredients and quantities are listed in the description box let’s have a look at the ingredients needed vegetable oil 1 cup whole wheat flour 1/2 cup gram flour/brown chickpea flour. if you wish to skip this increase the whole wheat flour to 1.5 cups 1 finely chopped green chilli 3 tbsp mango pickle masala 1/4 tsp salt but add only if needed as the pickle masala contains salt as well we will prepare the dough now in a kneading dish put in the atta, besan, chopped green chilli, achar masala and salt. hand mix until well combined now add water little by little and knead a soft dough like we prepare for roti. once the dough comes together just wet your fingers and knead the dough for 3-4 minutes once the dough is ready cover with a damp cloth and let it rest for 15 minutes after 15 minutes divide the dough into 3 equal portions keep the tawa to heat up on medium heat and while it is heating up make the first paratha dip hands in dry flour and take one portion of the dough and roll it into a flattened ball or peda dust it well with dry flour and roll out it out into a paratha about 6-7 inches round clean the kitchen platform surface well before rolling out the paratha once the roti is rolled fold it in half & then in half one more time as we are making a triangular paratha dust it with dry flour and then roll it into a triangular paratha as thick or thin you want the paratha is ready to be roasted. check if the tawa is hot enough by smearing a little dough on it with a finger the tawa is hot place the paratha on it flip it over after about 30 seconds. keep heat on medium cook this side for about a minute and flip it again spread a little oil over the paratha & then flip it spread oil over this side too roast the paratha by flipping frequently until it is well roasted on both sides. Adjust heat as required to low and back to medium while roasting the paratha any undercooked areas can be pressed upon with the turner as shown to cook them if you have the ready dough you can stuff this pickle masala after rolling the roti and prepare the paratha the first paratha is done. remove it and make the other parathas similarly. reduce heat to low while you are rolling out the parathas all the parathas are ready. serve them with hot tea or cold lassi depending on the season. do try it and share your experience if you like the recipe please share the video & subscribe to our channel and press the bell icon so you do not miss our new video notifications. thanks for watching
