Of cours all the riders are allowed to eat desserts. Not everybody does it. But we change the ingredients. For example, we make a panna cotta with yoghurt instead of cream. We always use fresh food. And then, for example, to top it off with a crumble we replace the butter with coconut oil, the flour with quinoa flour or rice flour and then we replace the sugar with agave syrup. And then you get the same effect. Of cours butter, sugar and flour… everybody loves the taste and the smell. But the effects of the desserts that we’re making are also sweet and good for the cyclists.
