hi there good for you living he with a
quick prep tip this is a basic meat marinade for this
demonstration I’m using chicken and this is a chicken thigh fillet. we will
start of cutting with the grain and what we are going do is like a butterfly
cut, we cut it thin but we don’t cut it all the way
through, we only cut with a thickness to spare then we make another cut in the same
thickness next to it this time we go all the way through, once
we spread it out you can see how it makes one large piece this is the same type of cut restaurants
will use for stir frys so we make one cut leave a little at the end and make a second cat
next to it this time all the way through then you can open it up, you can get one
big piece from one fillet of meat. one cut then the second cut all the way through and open it up, make sure you have a sharp
knife and you are using a sawing action just,
repeat the process until you are finisehd this method also works to steaks fillets of pork, lamb and other meats OK let’s put the meat in a small bowl and for this really basic marinade we add some salt some pepper a dash of soy sauce and finally some corn flour or
cornstarch its probably equal amounts of everything here OK now let’s give it a good mix through you can see that the cornstarch is
thickening the soy sauce liquid and sticking on to the meat. that’s perfect so there should be no runny liquid,
it’s more like a thin coating over the meat now, you can try adding other herbs and spices like paprika
ginger, garlic chilli, rosemary whatever you think
would go well with the meat this is also the same method I would use for
seafood as well here you can see the pieces are now nice bite size pieces that you are going to
