Malabar Special Paal Vaazhaka | പാല്‍ വാഴയ്ക (With English Subtitles) – Raziya’s Kitchen #85


Welcome to Raziya’s Kitchen Today I am nmaking a Malabar special delicacy called ‘Paal Vaazhakka’ For that take 2 cups of coconut milk ( use the lighter coconut milk, extracted after first thick milk) in a saucepan and switch on the flame. This dish is also known by the name ‘Kaai Curry’ Now when the coconut milk starts to boil add Sago (sabudana/chowwari) to this. Here we usen 1/4 cup Sago (soaked for 30 mins) the coconut milk is boiling so now let’s add the Sago to it Stir in between to avoid sticking to the bottom of pan let the sago cook in a medium flame the Sago turns transparent when it is cooked. It’s almost cooked so now we have to chop up two ripe bananas and Add them into the pan and mix them well and let it cook in medium flame When the banana is cooked, we can add 1/2 cup sugar to this and mix well You may keep aside little sugar as some ripe bananas will already be sweet enough Add 1/4 tsp of cardamom powder to this and mix well Now all the ingredients are well cooked so let’s now add 2 cups of Onnam Paal (first thick coconut milk) also, take care not to overcook the mix after adding the coconut milk for the second time we can turn off the flame as soon as it gets warm and begins to boil Check for sweetness, if you feel it is less, add more sugar as per your taste after we add the onnam paal (first batch of coconut milk) and cook it this is the consistency we should achieve for it to come out good this mixture will get thicker as it gets rested after we turn off the flame my preparation is less sweet than expected so I am adding the sugar I kept aside to it it’s getting warm and is slowly starting to boil we can turn off the flame now Now let us add some roasted cashew and raisins for that, I’ve taken 2 tsp of ghee in a pan add cashew and raisins to it and roast them well I have taken chopped cashews (10 nos) and raisins (20 nos) and roast well to a golden color let’s now add this to our dish and mix them well Paal Vazhaka is now ready to be served.
