Mexican Lasagna! Easy, Low Carb, Low Calorie and Low Fat! Mind Over Munch


Sometimes the best healthy meals just
come from playing around. I was having my Italian friends over for
dinner and I wanted to make them something fun. So I decided to combine something that I
know the love, lasagna, with our collective favorite cuisine Mexican. This dish was so easy and fun to healthify
and it turned out delicious so I just had to share it with you today.
PLUS you guys are always requesting easy healthy dinner recipes.
Start by placing your extra lean ground beef into your skillet over medium
heat. Today I’m using 96/4 which means about 4% fat but you can use whatever you want. Just
keep in mind that if you use regular ground turkey and not extra lean ground turkey breast
this will actually be less lean then the super lean beef.
Make sure you always read the label and fat content especially if lean is what you’re going for. Just
because it’s turkey or chicken doesn’t make it more lean. Also remember
you can always use beans if you’re going for a vegetarian dish.
Then you can add in your taco seasoning. I like to use my homemade blend which may be found in my meal prep ebook
but you can use any homemade blend or a packet if you’d like. I like to make
my own so that I can be in control of everything that goes into my seasoning,
especially that sodium. Continue to saute until nice and
brown and cooked through and then you can add in a can of diced green chiles and some salsa, heat preference of your choice. Mix to combine and set aside. Now we are
going to assemble the lasagna. Pour some enchilada sauce into the bottom of your baking dish. I
am using green here but you can use red if you prefer. Pick up your baking dish and swirl it
around to get a nice thin but completely covered layer of sauce. Place 1 full and 1 half tortilla
onto the bottom. These are going to serve as your lasagna noodles. I am using 1 whole in 1 half
tortilla, you could use 2 whole if you wanted but why add those actual carbs? You are not
gonna miss it I promise. On top of the tortillas we’re going to
spread our sour cream which is actually just plain Greek yogurt. The
perfect substitute. Then we’re just going to a layer of spinach to get in some extra veggies, why not, and spread out
half of our taco mixture evenly across the dish. Now just repeat those steps with another tortilla layer, some more Greek yogurt, spinach, the other
half of the taco meat, and finally 2 more tortillas on top. I
will finish with the 2 for beauty. Go ahead and pour a little bit more of that
enchilada sauce on the top and finish it off with some
low-fat cheddar cheese. It wouldn’t be lasagna
or Mexican without the cheese. But you will notice we didn’t include
any cheese inside the lasagna it’s only on top so this is really a pretty low fat dish. Bake in an oven preheated to 375 degrees
Fahrenheit for about 20 to 25 minutes until the
cheese is melted and bubbly and beginning to brown. Allow
to cool for about 20 minutes before cutting and devouring. This Mexican
lasagna is so fun and flavorful if you have friends or family who love
Mexican food this would be a super easy fun dish to prepare for them. As always there is a pdf download

  11. This kind of makes me think of enchilada casserole. Also, if you can get it, you should absolutely try roasted green chile – soooooo much better than the basic canned variety.

  17. I think some mashed pintos would be a great addition to the filling. They add carbs, but the fiber they add justifies it. You make some great looking food!

  18. Hi Alyssia, OMG what a delicious dish!!! I tried it last night and although I did not have Enchilada sauce it was just fine! I also replace the canned peppers by fresh ones and added chili flakes – we don't have all your wonderful ingredients here…. Anyway "devoured" was absolutely the right word!   22. I love love this lasgna. It only has a minimum amount of cheese and I can't have that much tomatos which is minimum as well. The green Verde sauce and sour cream makes the difference so good!!!
