Cooking with Bosch Seafood Pineapple Fried Rice Cut 200g of Fresh Squid into rings Chop 40g of Spring Onions 10g of Coriander Cut 200g of Canned Pineapples Slices into wedges Torch Pineapples Wedges for extra flavour Using the MaxoMixx Hand Blender, separately blend 5g of Ginger 15g of Shallots 20g of Garlic Beat 3 Eggs Place Squid Rings and 300g of Prawns in a mixing bowl Add a Pinch of Salt and Pepper Marinate well and set aside Boil 600ml of Water Add in Marinated Squid and Prawns Boil for 10 Minutes Strain the Stock Deshell the Prawns In a large wok, heat up 80ml of Cooking Oil Add Chopped Shallots Chopped Garlic & Ginger Fry till fragrant and slightly brown Add in Beaten Eggs Scramble the Eggs Deglaze with 2 Tablespoons of ‘Hua Diao’ Wine 2 Tablespoons of Fish Sauce Add 500g of Cooked Brown Rice Stir fry evenly Add 100g of Roasted Cashew Nuts 200g of Pineapple Wedges Cooked Squid Cooked Prawns 30g of Raisins 1 Tablespoon of Oyster Sauce 2 Tablespoons of Sesame Oil 30g of Chopped Spring Onions 5g of Chopped Coriander Fry and mix well Season with Salt and Pepper to taste Garish with 10g of Chopped Spring Onions 10g of Fried Shallots 5g of Chopped Coriander 15g of Fish Floss
