Welcome back to Salu Kitchen, I am Sameera Since it is Onam Holidays, all kids are probably at home This is a snack that you can make for them during tea-time This amazing snack is very soft inside and crispy outside Today I am making vada and a tasty chammandhi for the side So let us see how it can be prepared To prepare Uzhunnu Vada, take 2 cups of Black gram dal in a large bowl Standard measuring cup is being used, 1 cup=250 ml Whole black gram is used for this recipe wash well and soak I n excess water for 4 hours. To prepare chutney 1.5 cup coconut scrapings, 2 garlic cloves and 2 green chili Green chili can be taken as required a handful of coriander leaves salt as required blend these ingredients well after the first blend add 4 tbsp water and blend again I have blended this for a second time we have not included any sour ingredient yet so add 1 tbsp thick curd and blend again chammanthi is ready now transfer to a serving dish this is a very tasty dish see.. it is very easy recipe black gram has soaked well… drain the water this can be blended only after draining the water while blending, add a small piece of ginger and 1 green chilli this is done to get a good flavor these are tips that I got from vada shops I am blending the black gram dal in 2 batches put half the black gram batch into the jar add 2 tbsp water coarse blend it do not use excess water, else the batter will be too loose fold in and blend again this is the required consistency to check if the texture is right, take a piece and drop in water, if the batter floats , it is the correct texture if the texture is not right, then the batter drops down transfer the first batch to a large bowl similarly blend the second batch mix the second batch batter with the first batch take 8 shallots, curry leaves, a green chilli and a small piece ginger and chop well add these to the batter add salt as required this is the only stage where salt is being added if we add salt beforehand then a bitter flavor may come mix the batter well with hand this is the secret to the perfect vada mix well continuously for 5-6 minutes heat oil as required in a large cast iron pan link to the product in description take some cold water in a bowl dip the hand in water, and take a small portion of batter this prevents sticking of the batter to the hand roll the batter and slightly flatten and make a hole at the centre dip this into the hot oil and fry I am going to prepare 3 vada in one go fry on medium flame flip to cook the vada evenly fry until the vada is golden brown this crispy uzhunnu vada does not absorb oil you should all try out this simple recipe if you liked this recipe, then surely share it with your friends and family also comment your valuable feedback uzhunnu vada and chammanthi is ready now those who have not subscribed our channel, please do subscribe for more such amazing recipes for instant notifications, press the bell icon next to subscribe and select “all notifications” until we see again with another new recipe… bye bye
