The Easiest Seafood Paella Recipe with Shrimp and Scallops

Bienvenidos welcome to Spain on a Fork before we begin it dawned on me the other day that bienvenidos means the exact same thing as welcome so basically this entire time I´ve been telling you guys welcome….welcome to Spain on a Fork not that that´s a bad thing two welcomes are better than none anyways today we´ve got a great show we´re making a delicious seafood paella with shrimp and scallops this is one of the best paellas ever it´s very simple uses minimal ingredients and it´s done in 45 minutes you know when it comes to paellas it´s not always about the traditional paellas like the famous paella Valenciana with the chicken and rabbit or a traditional seafood paella like the paella that we´re making today it´s very simple but it guarantees to be one of the best paellas you will ever taste we´ve all heard this term before sometimes less is more now to make this paella there´s three key factors the first one is the pan make you use a paella pan yes you can use a frying pan in the past I´ve said you can but when you use a paella pan it cooks the rice evenly gives the paella a better texture to it invest in one of these they´re not that much link below where you can get the one that I´m using second thing is the rice make sure that you use round rice do not use long grain rice or short grain rice use round rice it´s very similar to medium grain rice which you guys can find at your supermarket and last but not least one of the most important ingredients in paella saffron make sure you use some high-quality saffron don´t use the imitation stuff as always I´m gonna be using saffron threads from golden saffron you guys know I´m a sucker for their saffron why? because it´s grade 1 premium saffron and it gives this paella that beautiful Spanish and Mediterranean flavor I highly recommend it link below where you guys can get this alright folks let´s get started we´re gonna begin by grabbing 3 large cloves of garlic and removing the skins I always like to twist each clove of garlic as the skin is easily removed and I also like to have a paper towel underneath for an easy clean up and finely mince the garlics next I´m gonna grab 1/2 of a brown onion remove between 2-3 of the outer layers just to give the onion a better texture and it makes it a lot easier to cut it and finely dice the onion next up I´ve got nine scallops here I bought these frozen they´ve been thawed out I´m gonna pat them down with some paper towels to remove any of that extra moisture and then season them with sea salt on both sides and freshly cracked black pepper again on both sides for the final ingredient I´ve got some raw jumbo shrimp that have been peeled and deveined again I bought these frozen and thawed them out just because it makes it a lot cheaper I´m gonna pat them down with some paper towels and then season the shrimp with sea salt and freshly cracked black pepper ok let´s start cooking our paella grab a paella pan heat it with a medium-high heat and add a 1/4 cup of extra virgin olive oil 2 minutes after adding the oil I´m gonna add the scallops into the pan now these scallops are not very big so I´m gonna cook them for 3 minutes per side If your scallops are bigger cook them for a little bit longer after cooking our scallops for a total of 6 minutes that´s 3 minutes per side I´m gonna remove them from the pan and transfer them to a bowl and cover it with some foil paper to keep them warm now using the same pan with the same heat I´m gonna add the diced onions and mix them around with the oil making sure to scrape up anything that was left over from the scallops this is gonna give our paella an amazing flavor about a minute after adding the diced onions add the minced garlic and mix them around with the onions one minute after adding the garlic and you don´t want to cook it any longer that way it doesn´t burn I´m gonna add 1/2 a cup of tomato puree this is basically canned tomato sauce 1/2 a tsp of sweet smoked Spanish paprika season with sea salt and a little freshly cracked black pepper and mix it all together until it´s well combined after cooking our tomato sauce for about 2 minutes I´m gonna add 2 1/4 cups of fish broth very important to use a high-quality fish broth in this paella then pinch in about 1/2 tsp of saffron threads and season it with sea salt and give it a quick mix that way everything is evenly distributed once this comes to a boil we´re gonna let it boil for an extra minute that way that saffron can really infuse into the broth then we’re gonna add 1 cup of round rice and gently divide the rice throughout the pan that way it’s evenly distributed this is a very important part because after this you’re not gonna mix the rice anymore with a spoon but you can give the pan a quick shake once in a while its been about 8 minutes since I added the rice into the pan at this point add the shrimp into the paella and again you can give the pan a quick shake here and there that way everything is evenly distributed 2 minutes after adding the shrimp into the pan and a total of 10 minutes since we added the rice go ahead and lower the fire to a low-medium heat and add the scallops back into the paella after simmering your rice between 4-5 minutes on a low-medium heat and you can see that there’s very little broth left it’s time to achieve that socarrat we’re gonna do this by hitting this to a medium-high heat and we’re gonna cook this for about 2 minutes this is gonna give us that perfect caramelized rice in the bottom now on your pan and on your heat it might be a little bit longer or a little bit less this takes some time and some practice on my heat with this pan it’s exactly 2 minutes after exactly 2 minutes I’m gonna remove the paella pan from the heat and cover it with a dish cloth I always like to put a piece of foil paper first that way I don’t dirty my dish cloth while we leave our paella to rest for about 5 minutes I’m gonna cut a couple slices of lemon and grab a handful of fresh chives and finely chop them after 5 minutes I’m gonna uncover the paella and look how amazing this looks I’m gonna garnish it with a couple slices of lemon and a generous portion of the freshly chopped chives these chives along with the seafood create an extraordinary flavor ok guys our paella is done this looks so amazing I’m gonna get in there and show you guys that famous socarrat which is that layer of caramelized rice that’s underneath and give this a try I am so excited to try this…here we go bravo what an amazing flavor to this paella so simple but it has an explosion of flavors to it those scallops are perfectly cooked that rice with that layer of the socarrat gives it texture amazing paella so easy to make minimal ingredients done in 45 minutes no
