[Music] [Music] hi guys such Anna here welcome back I have something very nice to share with you guys um two of the best things that happened to me last year many good things will happen to me last year but those I really wanted to share because they come along somehow I will explain I met a very good friend called marina we’re in a bit to Z we met in Brazil through a mutual friend and you can find her on Instagram through the under the name of vegan chemistry she is a food engineer if I’m not mistaken I think she is and she just came back from Italy she went back to Brazil from Italy because she was studying vegan food there so she’s a very inspiring person she’s very kind compassionate beautiful inside and out I strongly suggest you to follow her she is amazing and the second thing is that I am celebrating with you guys the fact that I moved to Spain so we’re going to make more in a bit to this recipe which is chickpea omelet and we’re going to put in the omelet Spanish ingredients so it’s going to be a Spanish tortilla how wonderful is that come on guys come with me I’ll show you how it’s made it’s going to be fantastic I can play alright guys so here we have our onions and red peppers we’re going to sweat them I don’t want to cook them I want to sweat them until they get just a little bit cooked and then we can go ahead and add the garlic again just remove the raw edges it’s going to be about 50 seconds meanwhile we’re going to boil our potatoes but we want them firm we don’t want them mushy and falling apart because you see later that is not going to work here we add our chickpea flour if you don’t have chickpea flour if you can’t find it if you just like me who live in a stranded Island off the coast of Africa and you can’t find anything you can buy proper chickpeas and then put them on a very powerful blender or something like that and then in half a flower see avpd no rocket science here so far I’m joking there’s no from rocket science at all we add all the dry ingredients but don’t do like I just did I added everything and then I added the water last big big big mistake because well we know physics right so it’s much easier if you combine all the dry ingredients and then the water and then the cooked vegetables and the solids oh well well raise your hand if you have never done that mistake well I have many many times I have to do as you can see well that’s the only way to learn things right by making mistakes now baking soda and lemon juice create bubbles create air it makes the air expand and makes our baking very very much fluffy very much fluffy is good I thought that it was a little bit too runny so I decided to add a little bit more of chickpea flour again see the lumps there it took me a while to dissolve them but it was all okay avian not much drama here they all good and safe and looking good guys if you are those chickpea aficionados like me you gotta make this but the beauty about this bacteria is that I have never had an egg omelet in my life but it tastes just like it according to people who have had that before and I know that it smells like our potatoes again they are firmly cooked and see they are not falling apart another tip before adding the potatoes let them cool a little bit it’s easier like okay let’s go ahead now and check for the seasonings for the last time it’s a last chance all good now the best thing for this dish is vegan butter because the butter gets everything a little bit more golden brown as opposed to olive oil I do not like olive oil to that at all I know it’s very strange yourself but the vegan butter you add a little bit more of softness and a little bit more color tortilla is in and now we just need to wait for five six minutes each side flip it over ideas fell apart did it again but nonetheless here we have our insanely delicious and shockingly effective tortilla our Spanish tortilla is ready it’s at least a muy muy guapa guys seriously this is something and I gotta tell you I have never had omelet in my life but I know how it smells these smells just like egg omelette go figure and of course I’m gonna have to try these it’s screaming my name this evening it mean it means oh sorry oh my god wonderful you’re gonna love it you guys seriously make these like piranhas you the other thing is it’s packed with proteins clean fling nutritious protein what are you waiting for you guys thanks for watching don’t forget to Like share and subscribe and I see you next time everyone [Music] [Music]

  9. Kappa Manis black salt smells like egg! An revered Indian product, a must have for egg dishes, 1/2 tsp go light but SMELLS exactly like egg!

  10. If you don't have the flour, could chickpeas from a can be used? I'm wondering because they're usually much easier to access, and aquafaba is used as egg whites in some recipes. I'm thinking maybe the beans, the aquafaba, and omitting the water? I may have to just try it because I'm only seeing chickpea flour recipes

  12. If you add a tablespoon of rice flour to the chickpea flour, it will be easier to flip because it will hold together better and will have a slight crunch in the edges.

I've been cooking for decades & have Indian descent so am so pleased you have incorporated using chick pea flour into many of your dishes. Thank you for the most fabulous omelette recipe I ever made. I also took the liberty of adding a half teaspoon of turmeric & increasing the black pepper a bit & used olive oil as I was all out of vegan butter. I must check your recipe for that. The one I've been using has turmeric & nutritional yeast & ACV in it which gives good flavour & colour , just an fyi .   16. Sorry, that's not an omelette… If it's without eggs and there is no bacon and sausage(minimum)in it, don't call it an omelette because, it is NOT an omelette.

  19. I've heard that bananas contain a lot of pesticides esp. inside the peel, so only organic bananas should be used for this I guess? Or does the peel also contain those pesticides in organic bananas?

  20. You may want to season your tortilla with black salt (kala namak); it will impart the authentic aroma of cooked eggs.

  27. No doubt your tortilla looks yummy and I'm sure it is. But the traditional Spanish omelette is a lot simpler, it only has 4 ingredients: potatoes, onion, olive oil and eggs. I make vegan Spanish omelette with 5 ingredients: potatoes, onions, chickpea flour and water, olive oil. I also don't deep-fry the potatoes but I cook them in the oven with a drizzle of olive oil. The end result is really close to the traditional one.

    I don’t miss the taste of eggs but for those who do they can add a small pinch of black salt. It’s sulphur rich so it resembles eggs.
    One more point about cooking with olive oil is that it has a very low smoke point, 275 F, I think. Therefore, not as healthy as grape seed oil or avocado oil.

  30. hello Chef Jana, firstly i must say – you are AMAZING! You make everything look so delicious that i want to try ALL your recipes! Even more importantly, watching you effortlessly cook them, makes me shout: I'M GOING TO MAKE THAT! or I CANT WAIT TO TRY THAT! (Whereas, some other vegan channels have recipes that i watch then say…. "nah thats too difficult, i don't even want to try it!") However…..much as i hate to bring this little party down, I am having a bit of a problem copying your recipe into my book. I dont mean to be picky or peculiar or pedantic, but i am confused.
    please could you tell me – Is it ONE CUP of chick pea flour? or is it a HALF CUP of chick pea flour?
    When you listed the one cup ingredients, like the water and the spinach, you wrote them as "1 cup"
    BUT when you wrote the chick pea flour, you wrote "1/cup" (with the forward-slash after the 1) like you were intending maybe, to type 1/2 cup instead?
    The same thing happened with the one teaspoon of black pepper. The salt and the oregano are both written as "1 tsp"
    BUT the one teaspoon of black pepper is written differently. (with the forward-slash after the 1) Like this: " 1/ tsp"
    Soooooo please could u advise for me – is this just a typo & I should ignore the forward-slash? or was the black pepper supposed to be a half teaspoon maybe?
    i double checked during the video but you didn't say the AMOUNT….just the ingredient, as in "NOW ADD THE CHICK PEA FLOUR"
    Anyway, most wonderful Chef Jana…i hope you can understand what i'm asking in my convoluted confused kinda way….cos

  34. it took me a while to find chickpea flour and your tip to grind them up was vr vr helpful. I followed the recipe exactly and it worked perfectly. Oddly enough — I've been vegan for several years and don't have cravings for foods that mimic meat — but a neighbour of my sister rescues unhappy chickens and brought me 2 eggs; extreme vegans you can all kill me now. Perhaps the only thing that wasn't perfect was the baking soda so I brought it up, not recommending eggs by any means although this is supposed to be a Spanish/Italian frittata. I lived in Sao Paulo for some time; my best friend is Brazilian; it is also a fascinating cuisine that can be adapted. You look very beautiful as you cook and will inspire other women who don't feel so well about themselves

  36. So India, we get something called as black salt( Kala namak) I don't know, if people across are aware of it. If u add this salt to the mixture, the omlette will taste exactly like eggs. Try it!
