Due to many requests, I will demonstrate how to make zamarut pulao For this recipe, we need the following ingredients: We will begin with cooking the spinach. To cook the spinach, I will add 1/2 cup or 4 Tbsp of Canola oil in a large cooking pot. I have already washed and dried the spinach and now I am going to fry it with canola oil. I will fry it for about 3 minutes in medium temperature. Now that they are cooked, I will grind them to a smooth texture If you are wondering how I prepared the Beef broth, Here is how: I used a pressure cooker to boil the beef meat with onions, salt, and water for about 10-15 minutes. You can also use chicken as substitute for the beef meat. I will mix part of the chicken broth with the spinach for extra flavor. After about 5 minutes, the spinach has a smooth texture and I can use a strainer to clean up the excess pulp I am using a strainer to filter out the pulp for a finer paste We only need to use the spinach puree as a coloring agent for the pulao If you want to mix the pulp in your pulao , there is no problem with that. I am going to add the remainder of the beef stock into the spinach puree The water is boiling now and I am cooking the rice. I always add salt in the rice for flavor The rice grains are soft now and I can soak the rice Mix the spinach puree with the rice You dont have to use all of it. just use enough to give texture to your rice. Use a skimmer to mix the rice with the spinach paste. Place the beef stock from the broth in the rice and let it steam. Cover the beef meat with rice Add Cumin seeds – as needed Make holes in the rice to ensure its fully cooked and there are no uncooked grains. Close the lid with a cloth and let it steam for 15-20 minutes. Steam in medium temperature In another pan, add 3 Tbsp of canola oil and warm it up to medium temperature and add it to the rice. Steam for another 5 minutes. The rice is now ready for serving In a large serving plate, Separate the meats first and then add the rice Add tomatoes or other vegetables for garnishing.
