Zucchini Cheese Muffins Recipe


1 medium zucchini, grated. 2 large eggs. Salt & pepper to taste (other seasonings as you prefer). Grated zucchini without squeezing Finely diced red capsicum (optional) 1 cup grated cheese(s) 125g (1 cup) all-purpose flour (mix with the zucchini 1/2 cup at a time) The 2nd half of flour. 1 tsp baking powder. Spoon the batter into greased muffin tin until almost full. Mine was made into 9 Bake for 25 minutes at 200°C preheated oven.

  1. I'd add chopped tomatoes but never peppers! They take over the flavor of every dish their in. I don't understand the obsession with peppers all the time. I will definitely try this. Looks great!

  2. You can actually double the amounts, add some chopped onion and make this a pie. We make this non-fyllo pie in Greece.

  10. I’m definitely going to make these!!!! But I’m confused about the red vegetable that looks like red pepper. I’ll have to watch this again to see what that name is. Oh! CAPSICUM??? I’ve never even HEARD of that!! I hope my grocery store sells that. If not, I’ll get red pepper.

  13. Cut stripes of parchment paper; put them in a cross in the muffin tins before filling them. It will be easier to take off your muffins.

  15. What can we use as altrnative to cheese? Any suggestion? Cause I'd like to make this recipe but I don't want cheese.

  16. Those are gorgeous. What goes well with those? Can you make them on the stove top may be pan fry method or deep fry like hush puppies or is the batter too dense for both?

  18. I just cooked this today follow your recipe and instructions and wow my husband and I Love this recipe OF yours. Thank you.
    Tip: we use a cupcakes Liner instead OF putting directly on the cup cake Pan .
    Grease the cupcakes liner with oil so it Will not stick the food on the cupcakes liner.

  19. Ninik. Thanks for this video. I'm wanting to make these but I'm stuck on the "one medium zucchini" part as I really don't understand what that would translate to in cups. I have several zooks right now and they range from about 8 inches to over a foot and trying to judge what would be considered "medium size" in your recipe has prevented me these last few weeks since I watched your video in making this recipe. SO, can you assist in giving an amount cup-wise please? Thank you.

  20. These were fast, simple and were quite good with our Turkey dinner than again I made them with stew. Because of the cheese watch the heat and cooking time, my first batch they were hard on the bottom so I lessened the time. Thanks!
